Quick & easy recipe ideas for your holiday apartment

Uncomplicated dishes for your stay in a holiday apartment, ultra-relaxed ways to cook. We have collected some fast, simple recipe ideas that require few ingredients and won’t create chaos in your holiday kitchen.

The advantages of a self-catering holiday

When you stay in a holiday home, you benefit from maximum flexibility and privacy. And that begins with breakfast: Do you prefer to enjoy a bowl of cereal while you are still in your pajamas, or the first coffee of the day in bed? In a holiday apartment – unlike a hotel – that’s simply never an issue. You don’t have to give rigid mealtimes a second thought. And standing in line at the buffet counter, well, that’s just a distant memory. That said, you might think to yourself: Why would I want to spend valuable vacation time in the kitchen (“Hi!” to all you hardworking moms out there, by the way)?! But with our quick recipes, you will be able to conjure up delicious dishes sure to please the whole family. And who will do the dishes afterwards? In most of our accommodations, a dishwasher will be happy to oblige, whilst you and your loved ones are busy playing a boardgame. The winner gets to choose what will be for dinner on the next day of your wonderful holiday ;-)  

Food packing list for the vacation home

What groceries do you always need when you're on vacation in your vacation home? We recommend the following basic equipment so that you are prepared for first and uncomplicated meals in the vacation apartment:

  • Salt, pepper and spices you don't want to do without
  • Coffee (powder or capsules, filter bags), cocoa powder, sugar
  • Vinegar and (olive) oil
  • Soup seasoning / stock cubes and tomato sauce
  • Pasta, rice, bulgur or couscous
  • Potatoes and onions

When packing your suitcase, also think about the first breakfast in your vacation home. Maybe your favorite cereal? Milk, toast and honey? You will be ideally prepared if you have already found out the opening hours of the nearest supermarkets before you arrive. That way you know where you can buy fresh fruit and vegetables.

Our Top 6: Easy Recipes for Your Holiday Home

We don't do a lot of chopping in the kitchen on vacation. It should be quick and still taste good. With the following recipes, you can feed hungry mouths without too much effort:  

#1: Tarte flambée with onions and bacon: a quick classic

Ingredients (2 to 3 people):

  • 1 pkg of diced bacon (approx. 200 g)
  • 1 cup of sour cream, 1/2 cup of cream
  • 1 to 2 (red) onions, nutmeg, salt, pepper, chives
  • 1 pkg tarte flambée dough (or: 220 g flour, 1 pkg dry yeast, 3 tbsp oil, 120 ml lukewarm water, 1/2 tsp salt, 1 pinch sugar)  

Spread the yeast dough with the sour cream and cream mixture (seasoned with nutmeg), top with bacon and thinly sliced onions. Place in the preheated oven (220° C) for approx. 10 to 15 minutes. Sprinkle with chives before serving.  

#2: Rice Pudding: soul food for big & small

Ingredients (3 people):

  • 200 g rice pudding, 750 ml milk
  • 1 glass of apple sauce, a little butter
  • salt, vanilla sugar, cinnamon

Bring the rice to the boil with the milk, a pinch of salt, a tablespoon of butter and sugar and simmer gently in a covered pan for approx. 25 minutes. Stir again and again so that nothing burns. Sprinkle with cinnamon and sugar and serve with apple sauce.

#3: Pea soup: healthy and delicious

Ingredients (3 to 4 people):

  • 1 onion, 2 cloves of garlic
  • 800 g peas (frozen)
  • 1 l vegetable stock, salt & pepper
  • Add cream or crème fraîche to taste
    Don't forget the blender from home!

Peel and chop the onion and garlic. Melt the butter in a pan and fry the onion pieces over a medium heat until translucent. Add the peas and vegetable stock and bring everything to the boil, simmer for about 10 minutes. Finally, finely puree with a hand blender. Stir in the cream or crème fraîche, season to taste - done!

 #4: Salad is always a good choice – especially with these dressings

Classic balsamic dressing: Ideal for leaf salads or a tomato salad

Ingredients:

  • 1 tsp honey, 1 tsp Dijon mustard, salt & pepper
  • 4 tbsp balsamic vinegar (dark or white to taste)
  • 3 tbsp olive oil

Tip: Mix the ingredients in a jam jar and shake, adding the oil at the end. This will make the dressing smooth.

 

Light yogurt dressing: Ideal for cucumber or potato salad

Ingredients:

  • 150 g natural yogurt (3.5% fat), 1 teaspoon honey, 1 teaspoon olive oil
  • 2 tsp lime juice, salt and pepper
  • Some chives and garlic (to taste)

If the consistency is too thick, simply dilute with a sip of water.

Refreshing lemon and herb dressing: Delicious with a Greek salad, tuna salad or colorful salad

Ingredients:

  • 1 tsp lemon juice, 3 tbsp olive oil, 4 tbsp white balsamic vinegar
  • Salt & pepper, parsley (to taste)

To sweeten the dressing a little, add a little honey or sugar.
